As it is the Queen’s Diamond
Jubilee this weekend, I decided to get into the spirit of things by making some
Jubilee cupcakes!
For the cupcakes themselves, I
used a basic Victoria Sponge recipe, which can be found here. I also used some
Union Jack cupcake cases that I had left over from the Royal Wedding last year,
but there are lots of similar designs available in supermarkets at the moment
as well.
For the icing, I used Betty
Crocker vanilla icing, piped it onto the cupcakes and finished with a
sprinkling of red, white and blue hundreds and thousands.
